Hello and welcome to my site.  My name is Jeff Beavers, a graduate from Baylor University in 1998 with a BS in Computer Science.  Currently I own a winery, The Beavers Family Vineyards and Winery, as well as own the website XUnleashed and my old page Jeff Beavers.

    Jeff, Just following up on your 2010 Norton. I just checked the acid on my 11 gals and found it to be .70 after 6 weeks of malo fermentaion. I started at 1.1 so I am pretty excited to see it drop that low already. I was wondering what yours had dropped to. I think that I will still do a deep chill in an old refer.

      Excellent!!!

      I am fixing to check on mine this week, and will have to let you know. I am hoping for the same results. For the deep chilling/cold stabilizing, it is also to help get rid of the calcium carbonate particles that will have a mineral oder/smell that will drop out when the temp drops to around freezing.
